Vegan dessert? Vegan dessert!
I had to improvise a dessert last Saturday on relatively short notice and browsed through Mildreds Vegan Cookbook when my gaze fell upon a delicious looking Coconut-Passionfruit-Mousse Cake. Yummy. So, I decided to give it a go. I was extremely skeptical, having tried some vegan cakes/mousses in restaurants/cafes and never really like consistency and taste. But I was so wrong! Wonderful fluffy and light consistency, absolutely delicious combination between tart passionfruity and sweetish coconutty flavors. Lovely. I used slightly less than half of the sugar recommended in the recipe. And I guess that’s the reason why so often desserts, vegan or not, are not really my thing in restaurants: they are too damn sweet. Even worse, folks tend to use sugar replacement chemicals more and more – so they can claim „sugar free“ (which is fraud, in my opinion) – and it tastes like shit and you get to shit a lot, too. So fuck that. But this cake – wonderful. Relatively easy to make. And though it contains quite a bit of coconut and tofu, it is very light – much less stuffy than a traditional cake with eggs! So give it a try! đ
